Mint. Lime. What else do you need to know?
Start by making a mint simple syrup.
1 CUP SUGAR
1 CUP WATER
HANDFUL WASHED AND CHOPPED MINT
Easy right? Now put those in a pot give it a stir and bring it to a boil, then let it simmer for a while. I don’t know how long, it happened while I was eating dinner. 15 minutes atleast I’d say.
Then you want to zest some lemons. You’re going to need 3 tbsp zest.
Thats way more than I needed, I just dried it for later use.
Then you’re going to juice 4 limes. Put the juice and zest in a food processor so that the zest gets even smaller and the juice is really enriched by the zest. Add in the cooled mint simple syrup.
Then in a glass you’ll put 3 tbsp of the drink mix, and top it off with soda water! About 1/2 to 3/4 c of soda water.
So while this is a cheater mojito, it’s still delicious. Feel free to add an ounce or two of white rum. I woulda if I had it!
It’s so refreshing, and the syrup keeps in the fridge for weeks because of the high sugar content.
I couldn’t tell you exactly, but I’d say this would make atleast a dozen drinks!

3 tbsp lime zest
juice of 4 limes
Mix together zest, juice and syrup in a food processor. Pour 3 tbsp in a glass and top it off with soda water. Enjoy!

1 cup water
1 cup sugar
handful of mint, washed and chopped.
Stir in a pot, bring to a boil, then simmer for 15 minutes. Let cool before using.
