I made up this recipe for a roast last weekend. It’s a simple roast to put together, and you’re going to love how it tastes! It’s definitely a bit spicy, so tone down the black pepper if you don’t like that.
Use a mid-higher quality game or beef recipe with this, I don’t know exactly what type it would be, but talk to your butcher. Cowboy said I was using an “Venison Ass Roast”. So yah, choose one from the rump?
If you have fresh garlic, by all means use it, I’d run out. That may or may not have been the lowest point in my culinary career.
I used two 1 1/2 lb roasts, so this amount of rub will put a generous amount on a 3-4 lb roast.
The Tablespoon Roast
1 tbsp dried onion
1 tbsp dried garlic
1 tbsp garam masala (it’s a curry blend)
1 tbsp sea salt
1 tbsp black pepper (tone it down for a less spicier roast)
Mix together dry ingredients, and enough oil to make a paste, about 3-4 tbsp. Rub well all over the roast, and bake in a dutch oven for 15-20 min a lb at 350F. Really you need a thermometer, because at 125F for medium rare or 140F for medium you’ll take the roast out of the oven and let it sit in the pot for 15 minutes to let the tissues relax and the juices soak back in. It makes a big difference!
